Perfectly Pumpkin Pie

We love summer for obvious reasons - who doesn’t? but fall has a special feel to it that makes life feel like it’s starting all over again. The best parts of cool and tangy air, bright colors, blue, blue skies, and fresh apples are some of the best parts of it, though we also love all the hot drinks, apple cider, and.. pumpkin pie!

Baking a pumpkin pie is a simple collection of ingredients that don’t cost much and are for the most part healthy, and the best part is you can make it exactly what you want. Some people like the pie to be spicy and sweet, while some prefer one with less spice, or maybe creamier. We prefer the spicy, slightly sweet and creamy version that practically melts in one’s mouth and can only be made better with whipped cream.

Pumpkin Pie

Ingredients:
1/2 c sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp cloves
1/4 tsp nutmeg
1/4 tsp allspice
1/4 c baking molasses
2 eggs
1 3/4 c pumpkin (1/2 of a 29oz can)
1 (12oz) can evaporated milk (can substitute 1 1/2 c half n half)

Instructions:
Preheat oven to 350 degrees.
Place all ingredients in blender and blend till mixed. Pour into an unbaked 9" deep dish pie shell (this makes a very full pie. Make sure you use a deep pie pan, or there will be extra, which you can bake in a custard cup.)
Bake at 350° for­ 40-50 minutes or until a sharp knife tested in the center comes out clean.

Top with whipped cream and enjoy!
