Summer Recipes

Summer is a wonderful time. Getting outside, having picnics in the backyard, and having people over is what it’s all about.

Whatever you need for your summer gatherings, Kauffman’s has you covered. As always we have our own in season, fresh fruit for sale...and of course, any other items you might need for any kind of meal you might be planning. If you need some ideas, read on to discover recipes and products perfect for a breezy, summer meal. The following recipes could be used to comprise a complete meal or to mix with some of your other favorites.

Here’s a possible menu:

Kauffman’s Baked Beans

A while ago one of our employees developed a baked beans recipe that we liked so much we decided to feature it here. All the ingredients, including spices, are available at Kauffman’s Fruit Farm.

Serves 12 (sides)

  • ¼ c. Kauffman’s Apple Butter
  • ½ c. Kauffman’s BBQ Sauce
  • ½ c. bottled chipotle salsa
  • 8 oz Kauffman’s Apple Cider
  • ¼ c. molasses
  • 1 tsp dried oregano, crushed
  • 1 ½ tsp dry mustard
  • 1 ½ tsp ground cumin or chili powder
  • (1) 31 oz can pork and beans in tomato sauce
  • (1) 16 oz can pinto, cannellini, Great Northern, black or butter beans, rinsed and drained
  • (1) 16 oz red kidney beans, rinsed and drained
  • 1 large onion, finely chopped
  • 8 slices thick-cut bacon crisp-cooked and cut into 1” pieces

Note: all the spices listed are available at Kauffman’s Fruit Farm.

Directions:

  1. In a large bowl combine apple butter, BBQ sauce, cider, salsa, molasses, oregano, mustard and cumin. Add undrained pork and beans, drained pinto beans, drained kidney beans, onion and bacon; stir gently to combine.
  2. Transfer bean mixture to a 2 ½ - 3 qt. casserole. Bake, uncovered, in a 325° oven for 2 ½ - 3 hours or until desired consistency, stirring occasionally. Beans with thicken as they cool. 

Cole Slaw

Simply add this All Natural mix, which is a combination of carrots, celery salt and seed, red bell pepper, sugar and sea salt, to mayonnaise, sour cream and apple cider vinegar (complete Preparation Instructions shown below). Toss the mixture with fresh shredded cabbage and just like that you'll have created a refreshing coleslaw for use as a side dish or (don't miss trying this!) for topping pulled pork sandwiches.

Preparation Instructions:

Natural Creamy Coleslaw Seasoning Mix Old-Fashioned Cream Slaw 1/2 Head Cabbage-shredded (about 1 lb) 1 c. Mayonnaise 1/2 c. Sour Cream 1/4 c. Apple Cider Vinegar 3/4 c. Creamy Coleslaw Seasoning New York Style Coleslaw 1/2 Head Of Cabbage-shredded 1 c. Mayonnaise 2 Tbsp. Creamy Coleslaw Seasoning FOR ALL RECIPES: Mix the dressing together, then fold in your cabbage, let set for 1 hour or more refrigerated and serve.
