I’m loving peach season this year, with this Perfectly Peach Bread Pudding!

We are in the height of peach season as well as apple season. I have fond memories of making delicious concoctions with my grandma from both fruits in my youth.

Simple things like bread puddings, cobblers and crisps come to mind this time of year. The leaves beginning to change, the days getting cooler as well as trips to an orchard to pick apples and peaches as a family.

We received this wonderful Mix ‘n Match Fresh Fruit Box.

It contained 16 peaches

and 16 apples (8 Ginger Gold & 8 Stayman)

The awesomeness is that you can choose which fruits you would like in this assortment, making it easy to sample some of their many varieties of farm fresh fruit.

Following a Trim and Healthy lifestyle has brought a new appreciation for farm fresh fruits such as these and opened doors to controlling our blood sugar while still enjoying the simple pleasures and foods we eat.

Those beautiful peaches you see pictured above inspired me to make one of our family favorite treats, this Perfectly Peach Bread Pudding.

As we are following the Trim Healthy Mama eating plan, I made this with sprouted whole wheat bread and this brown sugar replacement.

Using brown sugar instead of white sugar adds a depth of flavor to this dish that we hadn’t had in previous versions.

Using healthy ingredients gives us a clean carb source that doesn’t spike my blood sugar with the addition of protein in the greek yogurt and eggs.

This dish is a wonderful treat for those that have reached goal weight, nursing mama’s or for growing children that have higher metabolisms.

I normally separate my carbs and fats but this just wouldn’t be the same if I did.

As a side note, crossovers on Trim Healthy Mama are on plan as well as good for you… as a healthy way to change things up. I’ve noticed that if I incorporate 1-2 crossovers in a month my weight will steadily decrease, especially if I have noticed a stall in my weight loss (-65 pounds and counting).

Perfectly Peach Bread Pudding

Ingredients:
8 TBS unsalted butter (4 TBS softened + 4 TBS melted)
6 cups sprouted wheat bread (or sour dough), torn and toasted
1 cups heavy cream
1 cup 0% greek yogurt
2 cups almond milk (or other on plan milk)
2 pounds peaches, peeled, seeded and cut into 1 inch pieces
1/3 cup brown sugar replacement (I used THM Super Sweet Blend as my base sweetener)
5 large eggs
1 tsp vanilla extract

Instructions: 
Preheat oven to 350^. Butter a 10x 14 baking dish with 1 TBS of softened butter.
In a large bowl combine torn bread, milk, yogurt and heavy cream. Let sit for 15 minutes, stirring occasionally.
While bread is soaking, melt remaining 3 TBS of butter with 2 TBS of brown sugar replacement until bubbly, add peaches and cook until peaches are softened. Set aside and allow to cool slightly.
In a medium bowl whisk together eggs, remaining sweetener and cinnamon. Add to bread mixture and stir to combine. Add warm peaches and gently fold in.
Pour mixture into baking pan. Drizzle with melted butter and bake for 45-60 minutes, or until set and golden brown.
Allow to cool for aprox 20 minutes or until warm. Serve with Whipped Cream.
