Grilled Balsamic Honey Peaches & Peaches in White Wine

You have no idea how excited I was when I pulled up my driveway and saw a BIG box from Kauffman’s Fruit Farm waiting for me! I couldn’t wait to receive The Mix’n Match Gift Box! This is a variety gift box and you can choose your perfect combination of in-season fruit, including plums, peaches, pears and apples of course! I chose peaches (fresh, local peaches – yes, oh yes) and two types of apples – Zestar & Pink Lady.

The sweet aroma of fresh peaches when opening the box was almost intoxicating. Sixteen peaches safely nestled in their cushioned foam housing. Some were perfectly ripened & ready to eat immediately and others needed a few days on the counter. A wonderful balance.

I certainly can’t forget about the apples. Sixteen fresh, crisp, beautiful apples. I love apples!

Would you like to know the hardest part of working with this months fruit selection? Stopping myself and my family from devouring the fruit before I could work with it. Everything was so delicious!

I had so many ideas of what I was going to do with the peaches and apples before they arrived. All plans changed after I tasted the fruit. Everything was so fresh, sweet, juicy, crisp and perfectly ripened. I felt as it would be almost tragic to bake with it. I decided to keep it simple and focus on enhancing the amazing flavors of the fruit.

I had a lot of fun with this fruit and made a whole slew of fresh and easy recipes. Today I’ll share my two favorite no-bake peach recipes.

It was a lovely day and I felt like grilling. Peaches on the grill? You betchya! Add A little balsamic vinegar, honey, salt and a hearty pinch of your favorite (good) cheese and you’ll have yourself an impressive dessert!

I brushed on the balsamic & honey mixture on both sides of the peaches generously and frequently while grilling. After the peaches were grilled to my liking and plated, I went to town shredding Gruyere Cheese on top. A little whipped cream to top it all off and our sweet afternoon snack was complete.

There you have it – a fresh, simple, delicious and almost fancy peach prepared on the grill. The balsamic and honey in this recipe simply enhance the flavor of these sweet, ripe juicy peaches! I could eat these every day!!

Perhaps you don’t feel like grilling? Don’t feel like cooking? I have the perfect recipe for you! The most work you have to do is slice some peaches and open up a bottle of wine. I can handle that any day!

Peaches in white wine is a simple, classic Italian dessert. Use your sweetest, ripest, juiciest peaches and a cup or two of your favorite dry(ish) white wine. Cover the sliced peaches in wine and let the peaches macerate (soak in wine) for at least a few hours, preferably a day. Serve the peaches in the sweet wine syrup and enjoy. It’s a simple, crisp, fresh peach dessert. Yum!

GRILLED BALSAMIC & HONEY PEACHES WITH GUYERE CHEESE

Prep Time: 5 mins
Cook Time: 10 mins
Total Time: 15 mins
2-4 servings

Ingredients:
2 peaches
3 tablespoon balsamic vinegar
3 tablespoon honey (raw is best)
sea salt, to taste
Gruyere Cheese, to taste
whipped cream, optional
olive oil for grill

Instructions:

1. Cut peaches in half and remove pits.
2. In a mixing bowl, combine balsamic vinegar and honey. Whisk until combined.
3. Let peaches rest in balsamic mixture until grill is ready.
4. Heat up grill.
5. When grill is at temperature, brush grates with olive oil.
6. Place peaches on grill, over direct heat. Brush generously with remaining balsamic mixture. Grill about 4 minutes each side or until desired tenderness and color.
7. Lightly salt.
8. Grate desired amount of Gruyere cheese over peaches and top with whipped cream.
9. Serve and enjoy :)
