Consider this Our Christmas Card to You…

We Celebrate

...the advent of the Savior of the world to give us hope, and the joy and cheer of this Christmas. This morning our hearts are full and overflowing with thanks for another good year and beautiful harvest. As fruit farmers there are few things more satisfying to us than growing and harvesting product each year, and when the harvest is in we sit back and reflect on the past year and look forward to spring buds and blossoms with softer winds.

Cinnamon Pecan French Toast

Christmas and New Years morning just isn’t quite complete without a special breakfast to kick start the day, and we’re bringing the deluxe version of make-ahead french toast.

Of course not everyone goes nuts over pecans, so feel free to sub your favorite apples or fruit in this dish, but otherwise please don’t deviate, because you would really hate to miss out on
the complete French Toast package. Here goes!

The Night before Christmas and all through the house,

everyone in the kitchen, gathered round to make toast..

Ingredients:

1 loaf crusty bread, French or Sourdough

8 whole eggs

2 cups whole milk

½ cup whipping cream (heavy)

¾ cup sugar

2 Tbsp. Vanilla

For the topping:

½ cup all purpose flour

½ cup firmly packed brown sugar

1 tsp. cinnamon

¼ tsp. salt

1 pinch nutmeg

1 stick cold butter, cut up

pecans or fresh fruit

Prep it:

  1. Grease 9 x 13 baking pan with butter. Tear the bread into chunks, (if a perfectionist into cubes) and layer evenly in pan.
  2. Mix together eggs, milk, cream, sugar and vanilla. Pour over bread evenly and store in the fridge a few hours or overnight.
  3. Get another bowl and mix flour, brown sugar, cinnamon and salt. Add nutmeg if you wish and then cut in butter pieces until mixture is about the size of baby peas. Store in a zip lock in fridge as well.
  4. Later… Preheat oven to 350F, remove casserole from fridge and sprinkle crumbs over the bread and liquid. (When using fruit layer underneath the crumb topping, pecans can be mixed straight into the crumbs before sprinkling) Bake for 45 minutes for a softer type of bread pudding texture, and 1 hour for a firm and less liquid texture.
  5. Scoop out portions for everybody, top with butter and drizzle with maple syrup.

Honey Roasted Carrots

Peel and cut 2 pounds of carrots to the size you prefer. Place in mixing bowl & add a few tablespoons each of olive oil & honey. Add a teaspoon of salt & some black pepper, garlic powder, parsley & any other spices you might like. Mix & put on a greased foil covered baking sheet. Bake at 425F for 20 minutes or till done.
